Tomato and bocconcini sandwich

Few weeks ago, I had tomato and bocconcini sandwich at the cafe beside the library. 
It was good, so I remembered the ingredients so I can make at home.
I baked baguette, and put pesto, sliced tomato and bocconcini cheese there.
It was ok, however, is this cheese originally tasteless????? 
Very plain, felt like chewing tofu.
Next day I made same sandwich with bread from Savary Island. 
It was ok but still.. no taste of cheese...

Yes, the cheese is always almost tasteless. Well, I like the taste, but it's pretty mild. It's good if you put olive oil and balsamic vinegar on it and make it as a salad. It's the same as the sandwich, just tomato, boconccini, olive oil, balsamic, and then a bit of fresh basil shredded on top. Yum!

So do you think even though I put some pesto, I still need extra oil and vinegar? I don't have balsamic vinegar now, I have to get some.
